Tuna Seared

Ingredients:        
         12oz. Tuna cut into 2 steaks
         3 tbsp Scallion, minced
         2 tbsp Soy Sauce
         2 tbsp freshly squeezed Lemon Juice
         2 tbsp Rice Wine
         1 tbsp fresh Ginger, minced
         Salt & Pepper to taste

Preparation:        
    Preheat a stainless steel skillet for 2 minutes over medium heat, and
    while the pan is heating, prepare the tuna steaks. First rub the tuna
    steaks with the lemon juice and pat with salt and pepper on both sides.

    Prepare both the ginger, and the scallions at this time and mince them.
    The skillet will now be hot enough for you to sear your tuna steaks on.

    Place the steaks on the skillet and cook for about 2 minutes on each side
    depending on the thickness of the steaks.

    When they are cooked to your satisfaction, remove the tuna steaks from
    the skillet and place on a warmed plate. Keep the skillet on the fire.

    Add the remaining ingredients in the order of rice wine first, soy sauce,
    ginger and scallion last to the pan, and cook for about 1 minute. Season
    this with the pepper and salt, and pour the mixture over the tuna steaks.
    Serve hot

Preparation Time: 10 minutes
Serves: makes 2 servings
