Tropical Tapioca

         200g Tapioca
         1½ cups Water
         1½ cups Coconut Milk (or any other milk)
         Sugar, Brown Sugar, Treacle or Maple Syrup to taste
         Salt to taste

    Place the water first of all in a saucepan and bring to a boil. Then you
    need to add in the coconut milk and let this heat up slightly.

    Next add the tapioca into this and make sure to stir constantly in the
    beginning so as to avoid forming unpalatable lumps.

    You can then add the salt to taste. Lower the heat to bring the tapioca
    to a gentle simmer stirring all the while. Do this for about five to eight
    minutes only, as the tapioca has a nasty habit of dissolving if left in
    water or on the fire for too long.

    You can then either add the sweetener of your choice at this point or
    when serving. Just be sure to serve this hot.

    For added taste dust a little of ground fennel over the top of the tapioca.

Preparation Time: 10-15 minutes
Serves: makes 4-5 servings
