Tomato & Butternut Soup

    1 medium Butternut Squash
    4 large Tomatoes, diced
    ¼ cup of Green Onions, minced
    2 tbsp of Olive Oil
    2 cups Water
    ¼ inch of fresh Ginger
    Salt to taste

    Peel, deseed, and dice the butternut squash. Add the oil to a saucepan
    and heat, add the onions and very lightly sauté. Then add the diced
    butternut squash and the water.  

    Simmer the whole thing on reduced heat for about 12-15 minutes until
    the squash is soft. Add 2 of the tomatoes and puree with along with the
    squash. Then add the remaining tomatoes and mix in well but do not

    Place on the fire again, and this time add the salt and ginger. Garnish
    with chopped green onions and serve.

Preparation Time: 25-30 minutes
Serves: makes 6 serving
