Sun Dried Tomatoes & Couscous
Ingredients: 1 cup Dry Wheat Couscous, uncooked 1 clove Garlic, minced 1 cup Vegetable Broth ½ can of Chickpeas (a 14oz can). ¼ cup Green Olives chopped ⅓ -¼ cup Sun-Dried Tomatoes, chopped 2 tbsp Lemon Juice 2 tsp Olive Oil Generous pinch of dried Basil Generous pinch of dried Parsley Salt to taste
Preparation:
Combine the Vegetable Broth, Olive Oil, and minced garlic in a saucepan and bring to the boil. Add the Couscous to the boiling Broth and then remove from heat.
Cover pot for 5 minutes. Next fluff the Couscous with fork to separate the grains. Combine the rest of the ingredients with the Couscous and stir.
Serve warm.
