Mediterranean Roasted Peppers

         2 Red Peppers
         2 Green Peppers
         1 Onion
         3 cloves Garlic, finely chopped
         ¼ cup Balsamic Vinegar
         ¼ cup Extra Virgin Olive Oil
         1 tsp. Lemon Juice
         Salt & Pepper to taste

    First, preheat your oven to 425 C, then you can cut your peppers and the
    onion into small chunks.

    You will then need to take a mixing bowl and whisk the olive oil, lemon
    juice, balsamic vinegar and garlic together until very well combined.

    You can then pour this mixture over the onions and peppers and toss
    until everything is nicely distributed. Next, place everything evenly on a
    baking tray and place this (on the top rack) in the oven for about 20
    minutes, or until the onions caramelize.

Preparation Time: 20 minutes
Serves: makes 4 servings
