Many Bean Salad
Ingredients: 1¾ cup Kidney Beans 1¾ cup Black Beans 1¾ cup White Beans, small 1¾ cup Red Beans, small 6-8 Scallions, thinly sliced 6 oz Mozzarella cheese, shredded 1 Green Bell Pepper, deseeded and thinly sliced For the dressing 1 cup Olive Oil ½ cup Parmesan cheese ¼ cup Parsley, chopped ¼ cup Red Wine Vinegar ¼ cup Red Grapefruit juice 1 tbsp fresh Thyme leaves, roughly chopped 1 tsp Salt ¼ tsp ground Pepper ¼ tsp dried Mustard
Preparation:
You will first need to drain and rinse all the bean varieties. Then take a large bowl and place inside the beans, the scallions and the bell pepper slices. Add the shredded mozzarella to this and toss lightly.
Next you will need to prepare the dressing. To do this take a suitable container and mix everything but the parmesan and the parsley. You can then pour this dressing over your bean salad and add the parmesan and the parsley as garnish.
Preparation Time: 15 minutes Serves: makes 10-12 servings
