1¾ cups of canned Pumpkin
2 cups Chicken Broth
1 Onion, finely chopped
1½ cups Milk (you can even use coconut milk)
2 tbsp Olive Oil
2 tbsp Brown Sugar
1 tsp Lemon Juice
¼ tsp Nutmeg
Salt to taste
Take a large saucepan and heat the olive oil. Next add the onions and
sauté for about 2 minutes. Then add the pumpkin, chicken broth, milk,
sugar, nutmeg and salt to the pan. Bring the ingredients to a boil.
You will then need to lower the heat and simmer for about 15 minutes.
Add the lemon juice after you take the soup off the fire.
This soup should ideally be served warm.
