Cold Avocado Soup

Ingredients:        
    1 large Avocado
    ½ largish Cucumber
    1 cup of Milk (of your choice)
    ⅔ cup Water
    ¼ cup fresh Cilantro
    4 Green Onions
    2 Limes
    1 small clove Garlic
    Salt to taste
               
Preparation:        
    Peel and deseed the Avocado, and juice the limes. Peel and chop the
    cucumber, chop the green onions and mince the garlic.

    Place the avocado, cucumber, milk, lime and green onions in a blender
    and blend until smooth. You can then add the remaining ingredients and
    blend only until the cilantro leaves are slightly chopped.

    You will then need to chill the soup for about 30 minutes before serving.
    You can then garnish with a few cilantro leaves.

Preparation Time: 45 minutes
Serves: makes 4 servings
