Chocolate Pudding

 3 cups Soy Milk or Milk of your choice
 ⅓ cup Cocoa
 ¾ cup Sugar
 ¼ cup Corn Starch (if you are going to use as pie filling then use ⅓ cup)
 3 tbsp Margarine
 1½ tsp Vanilla
 ¼ tsp Salt        

    To make this pudding you will need to place the cornstarch, cocoa, sugar
    and salt into a pot. Mix all of these ingredients together well. Blend in the
    milk and whisk to combine.

           Place pudding pot on stove and bring to the boil on medium heat.
    Keep stirring right throughout the cooking time. Once the milk has boiled
    reduce to a simmer for 5 to 10 minutes, covered.

           When the 10 minutes is up remove the pot from the heat. Into this
    still hot mixture whip in the vanilla and the margarine. Combine all
    ingredients thoroughly.

           Pour entire mixture into bowls or pie crust. Place the Chocolate
    Pudding in the refrigerator and chill for 3 hours.

Preparation Time: 3½ hours
Serves: makes 4 servings
